Cutthroat Trout Mounts. Cutthroat trout are the most widely distributed of all the western trouts of North America. This is a highly variable fish in coloration and size. The distinction that gave the cutthroat its name is the yellow, orange or red streak of color in the skin fold on each side under the lower jaw. There are many varieties of cutthroat. The largest form of cutthroat average around 20 pounds while the smaller varieties do not much exceed 5 pounds.
